One of my most favorite recipe books is Registered Dietitian and Food Network star Ellie Krieger’s, So Easy. It has everything from fast lunches and dinners, to slightly lengthier recipes and deserts. They are all simple, full of fresh flavors, and good for you. The recipes come complete with serving sizes and nutrition facts for anyone who’s interested.
Her Panzanella is fabulous and I’ve included the snap of the recipe below. Pictured here, you might notice I actually forgot to add the tomatoes (main ingredient!) Must have been a busy day in the office! But never fear… if you keep some fresh vegetables on hand, just substitute something else. I used red bell peppers and more cucumber. You could also add olives, artichoke hearts, or shredded kale. Being creative in the kitchen is one of the best ways to learn to become a better chef! We served this up along side some grilled chicken sausages, but it would also go nicely with grilled tilapia or shrimp. For a completely vegetarian meal add garbanzo beans or roasted tofu into the Panzanella.
